I don't know what this one is actually called, but my mum made it for us when I was a kid and I've done my best to recreate it...
Finely chop one onion and gently fry with 130g of pancetta (if you start the pancetta first, it will render the fat to cook the onion);
Once the onion is soft, add four crushed cloves of garlic and six finely chopped cherry tomatoes;
Fry for about another minute;
Add 2.5 litres of stock, either chicken or vegetable and bring to the boil;
Add about 200g grams of pasta shapes (I usually go for fusilli or conchiglie);
Add a couple of tablespoons of Parmesan cheese and you're good to go.

Chicken noodle soup…
Put 1 nest of noodles into boiling water, cook for 5-8mins take out and place in cold water…
Poach 1 chicken breast (don’t boil) for 15-20mins (keep chicken water)
Finely slice 4-5 mushrooms and finely chop 3 spring onions.
Putting it all together…..
To the chicken water add water to bring it up to about 2 pints, bring to boil
Add 3 teaspoons chicken bullion
2 level teaspoons salt
Chop up chicken and toss it in
Toss in mushrooms and onions
Add cooked noodles
Bring to a simmer
Add 3 teaspoons light soya sauce
Add 2 teaspoons dark soya sauce
Add quarter teaspoons white pepper
Add 1 teaspoon sesame oil or veg oil
Enjoy….
Tips… go to local Chinese store and buy chicken powder (about £4) and buy lucky boat noodles ( about £3 for a box)
Also try and use thin noodles cos if you keep soup for next day ordinary noodles swell up and you end up with a pot of wet noodles.trackebhoy and seamus1967 like this. -

Chicken Cajun Soup
Ingredients
· 1 green pepper, deseeded and chopped
· 1 large onion, chopped
· 2 sticks celery, chopped
· 2 garlic cloves, crushed
· 2 x 150g chicken breast fillets, skinned
· 1 x 400g can chopped tomatoes
· 1 teasp dried oregano
· 1 level tsp artificial sweetener
· 1 tablebsp Cajun seasoning
· ¼ teasp paprika
· ½ teasp tabasco sauce
· 1.7 litres chicken stock
· Salt and ground black pepper
· Chopped fresh coriander leaves, to garnish
1 Fry the green pepper, onion and celery with the crushed garlic until soft.
2. Cut the chicken fillets into small pieces and fry them in the same pan for about 3–4 minutes, until golden brown.
3. Add the tomatoes, oregano, artificial sweetener, Cajun seasoning, paprika, tabasco and stock. Simmer gently over a low heat for 30 minutes.
4. Season to taste with salt and pepper, and serve the soup hot, sprinkled with chopped fresh coriander.Jeannie960 likes this. -

Mines as simple as :56: I can't take onion, leek or celery but I make a mean basic lentil soup.
I'm more of a baker than a cook :84: My kitchen is full of gadgets to do the job for me. I use the Pressure cooker for soup and we get 6 days of soup for 2. I wait until it cools and ladle it into freezer tubs for the week. I can already hear all you Chefs out there laughing your heads off but I seriously cannae cook :56:
(1) 1 pack of Cooking Bacon (Morrisons £1.50 tremendous value) and fill PC 2/3 full with boiling water put on soup setting 20m
(2) Remove meat once cooked and set aside to cool
(3) I kg of grated carrots
250g lentils + 250g of split peas (washed) put both carrot and pulses in the stock and put back on soup setting (20m)
Once the 20m up release the pressure (better to leave it to depressurize Itself) Everything will have broken down
(4) Once you have the lid off chuck in 1 tablespoon of Smoked Paprika
(5) chop the Cooked bacon into bits and chuck it in too
You can keep the soup in the pot on the browning function with the lid off for a short while. Sometimes I add chopped tomatoes or maybe a tin of tomato soup just to give it a bit more kick but to be honest it's nice, thick and hammy without.trackebhoy likes this. -

It’s not tinned it’s in one of those plastic containers which must be better but closest to home made I’ve ever bought! -
