    You need to be at least half steamin to fully enjoy a donner IMO. Nothing tastes better after a good session and being pished takes away all those worries about what it's made from. Deffo chilli sauce too, cuts right through the grease.

    When I’ve been reekin a few times lately I’ve ordered doner meat and black pudding from the chippy. Chilli and salad sauce over the lot. Game changer.

    I had a monster kebab the other night

    A bed of chips and cheese topped with donner and chicken Tikka, all wrapped in two massive chipatis.

    Chilli and garlic sauce lathered on.

    Aye, a donner pizza is superb. The donner has to be cooked into the pizza though, I've had it before when the donner has basically bean slapped on after it's cooked. Just falls off as soon as you get the laughing gear round it.

    There’s a place in Leith that gives you two of those hoagie wraps every time you order one. Bizarre, but very welcome.

    Disregarding my scepticism about that actually being the process in a kebab shop, that donner meat can be hung on the spit for literally weeks and still be edible as far as Food Standards are concerned.

    Döner literally means to turn/rotate, a bit like rotisserie but for meat (Chicken, lamb or beef). Döner inspired the Arabs & they call it Shawarma, Greeks call it Gyros and even in Mexico it's similar to Al Pastor

    Turks serve it a number of ways - Durum, Tombik etc. based on the bread used or even as a platter over rice/bulgur without bread

    Typical ingredients:

    Lavash - Sometimes I prefer it with the thin lavash but equally a thicker pita/naan consistency bread is great/popular
    Salad - with tomatoes, onions, mini (persian) cucumbers, lemon juice & sumac (key ingredient)
    Yogurt sauce (Cacik - dill & mint seasoned
    Hot sauce - optional, or hot peppers
    Meat - Marinated thinly sliced on spit, typically vertical but occasionally horizontally


    Key factors for me are quality of meat and how it is cooked. Does it look like it was packed by a machine and processed or is it layered quality cuts of meat that have been cooked evenly & juicy? Bread I prefer always freshly baked bread - irrespective of whether it is thin lavash or thicker pita/naan consistency. And of course, the freshness of the other ingredients are important (Salad, sauces) but hot peppers, mini cucumbers & sumac are essential elements that are often minimized or ignored from restos

    The kebab shop doesn't actually prepare them, this is done and frozen off-site but yeah actual practices in the shop are a different worry altogether and probably the reason why id never buy a kebab from a chippy for instance where they likely hardly sell any donner meat. With a busy kebab shop and i'd imagine you'd be ok as they buy lighter spits at the start of the week and the bigger ones for the weekend when the shop gets busy.

    By the way. Farmfoods does decent donner meat. Not amazing but good for frozen *.
