    Don't know if it should all come of the bottom or 12mm top and 13mm bottom

    I'm assuming the cut has to come off the bottom of the door,and if so get a straight edge and a circular saw,make sure when you set the straight edge you allow for the base of the saw plus the width of the blade.

    If you are using a handsaw,then get a good crosscut handsaw,mark your line to cut and cut keeping your saw as square as possible.

    You could also use an electric planer
    However,if its an old door in an old house that has settled check the margin at the top of the jamb,if the margin is greater on the lock side than the hinge side,then its just a case of throwing the bottom hinge.
    To throw the hinge you loosen the screws and put a shim or shims in (until )the margin at the top and bottom at the lock side are equal,this is very common with old doors,and most times saves cutting.

    And yes I've been a carpenter/joiner for nearly 50 years,goodluck,and let me know how it went.
